You state your company type at the start of discovery, and the question set narrows from there. There are three profiles — manufacturing, trade/distribution and services. A company that does not manufacture is never asked about production lines, bills of materials, PLM or production planning; those departments never enter the discovery list at all. The reason is not politeness but measurement error: a question that cannot be answered creates a gap in scope that isn't real.
For projects targeting Odoo, discovery contains a separate Module Scope step: you see the curated first-party Odoo app catalogue under ten headings and, for every app, YOU mark whether it belongs to “the first go-live”, “within 6-18 months”, “later” or “not needed”. The catalogue is already filtered by your sector profile and the recommended shortlist is produced by deterministic rules — the language model does not guess this list, it only writes the rationale. The scope decision sits with you, not the consultant; the consultant can correct it.
Every module you mark expands the discovery questions. Modules headed for the first go-live open extra scope-layer questions (volume, users, is it really needed); later-phase modules push configuration questions into the deep-dive layer. A company that selects field service now gets asked about field service — previously it wasn't. A module you mark as out of scope opens no questions at any stage.

Evidence sources: structured discovery interviews, department questionnaires and documents you upload; when process data is needed, a ready event-log extract is used for Odoo and a standard CSV template for Zoho/abas. No live system connector is required.
